california chicken caprese skillet nachos
this recipe is a combo of my california caprese chicken skillet + philly chicken skillet nachos. a must try quick & easy meal that OOZES with flavor!
Ingredients
cheese sauce
- 5 oz5 oz5 oz Green Chilies
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 3 - 4 oz3 - 4 oz3 - 4 oz Mozzarella Cheese, or pepper jack
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in a little water
- 1 tsp1 tsp1 tsp Salt and Pepper, to taste
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Water
balsamic reduction
- 0.5 cup0.5 cup0.5 cup Balsamic Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 0.25 cup0.25 cup0.25 cup Water, as needed
meat
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Bacon Grease, or fat of choice
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/2" pieces
- 1 Tbsp1 Tbsp1 Tbsp Amore [Italian] Seasoning - Primal Palate
- 2 Tbsp2 Tbsp2 Tbsp Balsamic Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Water

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- n a food processor, add all cheese sauce ingredients, except water.
- transfer cheese sauce + water to a sauce pan & simmer until thickens or until remaining ingredients are prepared.
- then prepare balsamic reduction, by whisking together vinegar & sweetener.
- bring the mixture to a boil, then reduce to a simmer for 8-10 minutes to allow to thicken.
- remove from heat & allow to thicken while cooking remaining ingredients - add water if becomes too thick.
- in a large skillet, add fat of choice & melt.
- in a bowl, mix together chicken thighs & amore seasoning.
- add in chicken thighs to skillet; cook for 6-8 minutes; add in remaining ingredients for chicken; simmer for 5-6 minutes or until chicken is cooked through.
- to build nachos, add tortilla chips to a plate, then layer on chicken, cheese sauce, tomatoes, avocado, balsamic reduction, basil, & red pepper flakes.
