Caprese Cod
Summer is the perfect time for this quick and easy meal. Lunch or dinner, it doesn’t matter it is delicious either way. Loaded with fresh light flavors that will have you thinking of the Italian coast.
Ingredients
- 2 pieces2 pieces2 pieces Cod, or other white fish

- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil
- .5 tsp.5 tsp.5 tsp Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

- 2 oz2 oz2 oz Mozzarella Cheese, sliced thin
- 111 Roma Tomato, sliced thin
- 6 pieces6 pieces6 pieces Basil, Fresh, sliced thin

- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar, Aged 10+ years is best

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 375 degrees.
- Place the cod onto a nonstick pan, or parchment paper lined pan.
- Drizzle the olive oil on top.
- Sprinkle salt and pepper on top.
- Cook for 15-20 minutes. Depending on the thickness of the cut.
- Internal temperature should be 145 degrees to be fully cooked.
- Place mozzarella and tomatoes on top in alternating pattern.
- Sprinkle on basil leaves.
- Drizzle balsamic vinegar on.
- Enjoy
Notes
If you want it more cheesy you can place the tomatoes and cheese on and cook for another 2 minutes. This will soften the cheese and gives the end result a different feel. I like this version for dinner. But on hot days for lunch, the colder tomatoes and cheese seems more appropriate to me. Try both and see which you like.
