ā€œTHESE ARE THE BEST BARS EVERā€ - my daughter after her first bite of these cereal bars.

Thereā€™s no butter, oil, or marshmallows so I wouldnā€™t call these rice crispy treats, but they are squares of delicious sweet and crunchy goodness that make for a fun snack/treat for kids (or adults šŸ˜‰)

These are no bake, have minimal ingredients, and a great grab and go snack!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pour your cereal into a heat proof bowl.
  2. In a pot over medium low heat, pour the peanut butter and maple syrup together and stir until bubbling.
  3. Remove from heat and add the vanilla and salt.
  4. Add the hot mixture to the bowl with cereal and stir until combined.
  5. Pour into a parchment lined 8x8 pan and freeze for an hour.
  6. Let sit for about 5 min at room temp before cutting into squares. Can be stored in a sealed container in the fridge. Enjoy!

Notes

I used One Degree Organic rice crisp cereal, which are a bit thicker than the typical rice crispy cereal, so if youā€™re using rice crispy or another cereal similar in texture Iā€™d use 1/3 cup of peanut butter/maple syrup.
