Mini Rice Crisp Bites
Six ingredients come together for this super satisfying no-bake treat. Based off of Almond Butter Brown Rice Crispy Treats by @eatingbyelaine, we opted to make these in mini muffin trays because everything is more fun in bite-size (and they fit better in my kids' lunchboxes!)
Ingredients
- 3 cups3 cups3 cups Brown Rice Crisps
- 0.75 cups0.75 cups0.75 cups Almond Butter
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 1 cups1 cups1 cups Baking Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, mix all the ingredients together except your chocolate. Spoon the mixture into silicone mini muffin trays.
- In a small saucepan, melt your chocolate. Pour over your rice crispy mixture, sprinkle with sea salt, and freeze for 2 hours. Remove from tray, and enjoy!
