cheese stuffed bbq meatballs
these meatballs are stuffed with a gooey cheese cube & smothered in a sweet grape jelly bbq sauce. pair these with some veggies, a salad, or potatoes & you have yourself one delicious, balanced meal!
Ingredients

- 2.5 lb2.5 lb2.5 lb Ground Turkey, or meat of choice
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 222 Eggs
- 0.5 cup0.5 cup0.5 cup Sprouted Rolled Oats - One Degree Organic, ground into flour
- 0.25 cup0.25 cup0.25 cup Nutritional Yeast
- 2 Tbsp2 Tbsp2 Tbsp Barbecue Rub - Primal Palate
- 4 - 6 oz4 - 6 oz4 - 6 oz Mozzarella, cut into cubes
grape jelly bbq sauce
- 0.5 cup0.5 cup0.5 cup Unsweetened Ketchup - Primal Kitchen
- 0.75 cup0.75 cup0.75 cup Concord Grape Superfood Jam - Smash Foods
- 0.5 cup0.5 cup0.5 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Water
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 375.
- add all meatball ingredients, except cheese to a bowl & mix well.
- using a cookie scoop, make meatballs (~32 medium-sized).
- place a cube of cheese in the center of each meatball & make sure meat is fully covering cheese.
- make sauce, by adding all ingredients to a food processor.
- place meatballs in a baking dish, then pour sauce over top.
- bake for 30-35 minutes.
