Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a large skillet, sauté peppers & onions. .
  2. remove from skillet, then brown meat.
  3. add in sauteed veggies, green chiles, cauliflower rice, taco seasoning, & cilantro; cook until moisture starts to evaporate from cauliflower rice.
  4. in a food processor, add all cheesy enchilada sauce ingredients, except water.
  5. once moisture evaporates from cauliflower rice, pour cheesy enchilada sauce & water into skillet.
  6. let mixture simmer for 10-15 minutes; add more water if mixture is too thick.
  7. serve with cheese & cilantro garnished on top + your favorite chip to dip with!
