cheesy ruby romesco sloppy joe skillet
i love a sloppy joe skillet meal because it's quick, easy, & delicious! here I used my infamous ruby romesco sauce with the ingredient of the month - ground beef! this recipe is so full of flavor & a unique variation on a classic recipe.
Ingredients
- 2 lb2 lb2 lb 85% Lean Ground Beef - US Wellness Meats
- 111 ruby romesco (click for recipe)
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Beef Bone Broth, or water
- 4 - 8 oz4 - 8 oz4 - 8 oz Pepper Jack Cheese

- first make a batch of my ruby romesco sauce.
- in a large skillet, brown ground beef, draining as needed.
- once beef is fully cooked, add ruby romesco sauce + broth or water.
- bring to a boil, then reduce to a simmer for 10-15 minutes.
- sprinkle cheese on top - cover with a lid or broil for 3-5 minutes until bubbly.
- serve over veggies, fries, or chips for more of a loaded nacho OR with a couple slices of bread to make a classic sandwich.
