I adore Mexican flavors and am always looking for new ways to make easy tasty dishes that highlight them. This comes together in one skillet and you can eat it as is, add chips, fill a tortilla, or spoon over rice. It is super flexible. For this recipe I used US Wellness Meats pasture raised chicken breasts, Citreve’s freeze dried cherry tomatoes, and Primal Palates adobo seasoning. Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a skillet cook the chicken in oil on medium heat for 5-6 minutes.
  2. Add vegetables, stir and cook for 5 minutes.
  3. Add seasonings, tomatoes, salsa, and water. Stir and cook for 10 minutes on low heat.
  4. Spoon into bowls and top as you like.

You can add other toppings like lime, cilantro, red onions, diced fresh tomatoes…the ideas are endless.
