Chicken Pesto Calzone (Edit recipe)

These high protein Chicken Pesto Calzones are the perfect lunch or dinner recipe for those of you craving some nostalgia. These healthier pizza pockets are stuffed with chicken, pesto, onions, mushrooms, peppers, and mozzarella cheese before air fried to golden brown, crispy perfection!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Start by making the chicken breasts. Butterfly the chicken then cut all the way through. Season with smoked paprika, freshly minced garlic, salt and pepper. Use some low calorie spray on a large skillet and fry for about 7-8 minutes or until cooked, then shred or slice into bite size pieces.
  2. In a large bowl mix together the flour, greek yogurt, and a pinch of salt until it forms a dough ball, then slice into two equal balls. Flour the surface and flour the rolling pin. Roll each one out into a circle (about 4-5mm thick).
  3. Spread some pesto over each one, leaving a 2cm gap at the edge all around. Top one half with peppers, onions, mushrooms, chicken, and cheese.
  4. Fold over the dough and fold the edges in so everything is carefully enclosed (in a half moon shape), repeat for the second calzone.
  5. Carefully place in the air fryer at 190C (or oven at 350F) for 14-16 minutes or until the dough is cooked through. Once you've taken your calzone out of the oven let cool for 5-7 minutes and enjoy!

Notes

Feel free to substitute with all-purpose flour or self raising flour. I would not recommend using alternative flours such as oat or coconut due to consistency. Use your favourite Pesto sauce, or make your favourite homemade version. You can even use marinara sauce instead here if you'd like a richer tomato flavoured calzone. For seasoning the chicken, I use smoked paprika, fresh garlic, salt and pepper. For other add-ins, you are free to use whatever veggies you have lying around. There are plenty of options here, you can even add another protein source such as pepperoni.
