Chicken & Rice Burritos
These easy chicken and rice burritos come together in a snap using tender rotisserie chicken, fluffy rice, sautéed zucchini and onions, hearty kidney beans, and melty cheese. Perfect for busy weeknights, they’re a simple, satisfying meal packed with flavor and wholesome ingredients.
Ingredients
- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil
- 1 whole1 whole1 whole Onion, small, finely chopped
- 1 whole1 whole1 whole Zucchini, chopped
- 2 cups2 cups2 cups Rotisserie Chicken, chopped or shredded
- 1.5 cup1.5 cup1.5 cup Kidney Beans, *can sub black beans
- 1 Tbsp1 Tbsp1 Tbsp Taco Seasoning
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- Rice, Jasmine, any kind, precooked
- 1 cup1 cup1 cup Mexican Cheese Blend, *can use dairy-free
- 5 whole5 whole5 whole Flour Tortilla, *can sub gluten-free tortilla

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare the precooked rice according to package instructions and set aside.
- Warm the olive oil in a large pan over medium-high heat and saute the onion and zucchini until tender and fragrant (approximately 5 minutes).
- Remove from the heat and mix in the chicken, kidney beans, taco seasoning, lime juice, and salt and pepper to taste. Stir in the rice and cheese.
- Divide the chicken and rice mixture between the tortillas on the bottom third of each one. Fold the bottom and sides up and roll closed.
- If desired, place into the large pan and fry each side on medium-high heat until crispy. Alternatively, you can air fry them for 4-5 minutes at 400ºF flipping halfway through.
- Top with diced tomatoes and sour cream and enjoy!
