These easy chicken and rice burritos come together in a snap using tender rotisserie chicken, fluffy rice, sautéed zucchini and onions, hearty kidney beans, and melty cheese. Perfect for busy weeknights, they’re a simple, satisfying meal packed with flavor and wholesome ingredients.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prepare the precooked rice according to package instructions and set aside.
  2. Warm the olive oil in a large pan over medium-high heat and saute the onion and zucchini until tender and fragrant (approximately 5 minutes).
  3. Remove from the heat and mix in the chicken, kidney beans, taco seasoning, lime juice, and salt and pepper to taste. Stir in the rice and cheese.
  4. Divide the chicken and rice mixture between the tortillas on the bottom third of each one. Fold the bottom and sides up and roll closed.
  5. If desired, place into the large pan and fry each side on medium-high heat until crispy. Alternatively, you can air fry them for 4-5 minutes at 400ºF flipping halfway through.
  6. Top with diced tomatoes and sour cream and enjoy!
