Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 400ºF and generously prepare a large baking sheet with non-stick baking spray.
  2. With a mandolin slicer or sharp knife, cut the sweet potatoes into thin slices (approximately ⅛ inch).
  3. Place the potatoes in a large mixing bowl and gently toss with the olive oil, salt, sugar, and pepper.
  4. Lay the potatoes in a single layer on the prepared baking sheet and bake for 10 minutes. Remove from the oven, flip the potato slices, and bake for another 8-12 minutes or until golden and crispy.
  5. Top with dried parsley and additional sea salt if desired, and serve warm with your favourite dipping sauce. Enjoy.
  6. Store leftover sweet potato chips in an airtight container at room temperature for up to 1 week.
