These chocolate covered peanut butter stuffed dates are such an easy and delicious snack to keep in your freezer! The mixture of dates, chocolate, and peanut butter gives this the taste of a Snickers - but healthier! This recipe only requires five ingredients you most probably already have in your kitchen, and you'll need about 20 minutes to make these.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Line a baking tray with parchment paper and set aside.
  2. Take your date and using a knife, cut a straight line vertically along one side of your date, remove the pit, and set on your lined baking tray. Repeat for remaining dates.
  3. In a small bowl, prepare peanut butter filling by combining the peanut butter and protein powder.
  4. Use a teaspoon to scoop filling, and fill the inside of your dates. Press the date back together so it closes, and repeat for remaining dates.
  5. In a small bowl, melt your chocolate and coconut oil in 25-30 increments in the microwave, stirring between each increment until smooth melted.
  6. Dip your date in the melted chocolate and use a fork to pick up the covered date, tapping off any excess chocolate. Place date back on parchment-lined baking tray and repeat for other dates. Place in the freezer to set for about 20-30 minutes.
