Chocolate Eclair Crunch Bars (Edit recipe)

These popsicles are SO creamy, fudgey, and delicious, but dipped in white chocolate and cookie coating crunch?! What more could one want!

These are my favorite popsicles I've made HANDS DOWN

I used my favorite chocolate protein powder from just ingredients brand. Clean ingredients and great taste. Code colleenF10 saves you sitewide!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat coconut cream, dark chocolate, and milk over stove top until chocolate is melted.
  2. Stir in date syrup and protein powder
  3. Pour into popsicle molds (I got 5 worth)
  4. Freeze for at least 4 hours, or overnight
  5. Remove popsicles from containers, dip in melted white chocolate, and immediately roll in crushed cookies coating all sides
  6. The white chocolate will freeze immediately to the popsicles so you can enjoy right away or place back in the freezer until ready to enjoy!

Notes

**I used made good foods crushed vanilla and crushed chocolate cookies. Too 9 allergen free, but great taste and made for the perfect crunchy coating you can use any vanilla and chocolate cookies you wish
