Chocolate Mousse Cookie Dough Cups
These no-bake cups have all the sweetness you crave in a cookie without any baking gluten or dairy—perfect for a quick and satisfying treat! 😍
Ingredients
Cookie dough Cups
- 1 cup1 cup1 cup Almond Flour
- .5 cup.5 cup.5 cup Cookie Dough Granola Butter - Oat Haus, or any nut butter
- .25 cup.25 cup.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 pinch1 pinch1 pinch Sea Salt
- .5 cup.5 cup.5 cup Mini Chocolate Chips, Semi-Sweet
Chocolate Mousse
- .25 cup.25 cup.25 cup Coconut Cream
- 3 Tbsp3 Tbsp3 Tbsp Mini Chocolate Chips, Semi-Sweet
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, optional for added sweetness
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl, combine almond flour, granola butter, maple syrup, vanilla extract, and sea salt.
- Stir until a dough forms. If the dough feels too sticky, add 1-2 tbsp extra almond flour.
- Fold in ¼ cup of the mini chocolate chips.
- Line a muffin tin with paper liners or use a silicone mold for easy release.
- Divide the dough evenly among the cups and press it firmly into the bottom and slightly up the sides to create a “cup” shape.
- Place in the freezer for 10-15 minutes to firm up.
- Make the Mousse Filling:
- In a small saucepan, heat the coconut cream and chocolate over medium heat. Remove from heat when all chocolate is melted
- Whisk until fully combined and smooth.
- Pour about 1 tsp into the cookie cups
- Place the filled cups back in the freezer for 10-15 minutes until the filling is firm.
- Store in the refrigerator or freezer until ready to enjoy!
Notes
Swap almond flour for coconut flour if you prefer a lower-carb/nut free option (use 3-4 tbsp as it’s more absorbent).
