Chocolate Olive Oil Cake (EASY)
We've all heard of a simple lemon olive oil cake before but did you ever try making a chocolate olive oil cake? It's simple to make, crunchy on the exterior and soft on the interior.
Ingredients
- 0.75 cup0.75 cup0.75 cup Extra Virgin Olive Oil, ( I used Zoë Olive Oil
- 3 whole3 whole3 whole Eggs
- 1.25 cups1.25 cups1.25 cups Granulated White Sugar
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Cocoa Powder
- 0.5 cup0.5 cup0.5 cup Water, (boiled/hot)
- 1 cup1 cup1 cup All Purpose Flour
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Salt
- 0.333 cup0.333 cup0.333 cup Powdered Sugar, (sifted for garnish, optional)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat oven at 350F
- Grease a springform pan and set aside
- In a large bowl, add your eggs, olive oil, sugar and vanilla extract whisk together until incorperated
- In a small bowl, add cocoa powder add your hot water and mix until combined
- Add cocoa mixture to your large bowl and whisk until there's a chocolate mixture
- To your large bowl, add the flour, baking soda and salt and whisk again
- Bake at 350 for 30-35min or until the center is dry enough for a toothpick to be removed clean
- Cool at room temperature before adding powdered sugar for garnish
- Enjoy!

I used a 9-inch springform pan for this recipe.
