Mini Crab Rolls
This is a fun take on the iconic lobster roll! Yes, I know imitation crab isn't actually real crab but this is what I had in my freezer. Pollock needs some love too, guys! This is a super simple starter idea for your next gathering. Bookmark it and thank me later. Feel free to add some lettuce or tomato for garnish. I decided to keep it nice and simple.
Ingredients
- 1 whole1 whole1 whole Lemon, Zested
- 1 whole1 whole1 whole Green Onion (Scallion), Chopped
- 1 pinch1 pinch1 pinch Salt
- 1 pinch1 pinch1 pinch Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Parsley, Dried
- 2 Tbsp2 Tbsp2 Tbsp Mayonnaise
- 4 oz4 oz4 oz Imitation Crab (Frozen), (half a bag)
- 1 whole1 whole1 whole Brioche Bread, Mini versions

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a food processor, add your crab meat and pulse it until you get a grounded-looking texture.
- Add your crab into a medium-sized bowl along with the green onion, lemon, salt/pepper, and mayo, and mix well together
- Take your delicious brioche buns; you may or may not decide to toast them lightly in the oven beforehand
- Place a generous amount of your crab salad and enjoy
Notes
Dress your rolls as you wish but remember that simplicity is key. I like to store mine in glass containers in the fridge. It's good for about 7 days!
