Chocolate Pistachio Date Bark
Chocolate Pistachio Date Bark is my twist on the viral Dubai chocolate. I swapped in puffed quinoa for the knafeh to provide that crispy crunch, creating a guilt-free indulgence that combines rich, low-sugar dark chocolate with nutrient-dense ingredients. With pistachio butter for a silky finish and naturally sweet dates, this treat delivers a satisfying crunch while offering nourishment with every bite.
Ingredients
- 12 whole12 whole12 whole Medjool Dates, pitted, sliced in half
- 0.33 cup0.33 cup0.33 cup Pistachio Butter, see instructions to make your own

- 0.5 cup0.5 cup0.5 cup Puffed Quinoa, see instructions to make your own

- 8 oz8 oz8 oz Dark Chocolate, use a low-sugar chocolate for lowcarb

- 0.25 cup0.25 cup0.25 cup Pistachios, Roasted, chopped for topping

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a tray or baking sheet with parchment paper and press the dates flat using a rolling pin.
- Spread pistachio butter evenly over the dates.
- Melt the chocolate in a bowl (microwave or stove top), then stir in the puffed quinoa.
- Pour the melted chocolate mixture over the pistachio butter and sprinkle with chopped pistachios.
- Freeze for at least 30 minutes, then slice or break into pieces and enjoy!
- Pisachio Butter: Blend 1 cup of roasted shelled pistachios in a food processor until crumbly. Slowly drizzle in 1-3 teaspoons of avocado oil, blending until smooth, adding more if needed for a creamy consistency. Mix in ¼ tsp salt and ½ tbsp powdered sweetener. Blend until fully combined.
- Puffed Quinoa: Rinse & dry the quinoa, then add 3 tbsp at a time to a hot pan on medium-high heat. In seconds, it starts to pop & puff—just like magic! Remove & repeat with remaining quinoa.:
