- Melt the butter in a medium skillet over medium heat. Add the kataifi and use tongs or a spatula to toss and separate the strands gently.
- Sauté for 5–7 minutes until golden and crispy, stirring often to prevent burning. Let it cool slightly.
- In a bowl, mix pistachio butter and tahini until smooth. Fold in the crisped kataifi until well combined.
- Place parchment paper on a small tray or baking sheet.
- Layer sliced strawberries across the parchment in a single, even layer.
- Gently spoon the kataifi-pistachio-tahini mixture over the strawberries. Press lightly to help it stick together.
- Melt the chocolate and coconut oil in a microwave-safe bowl or over a double boiler until smooth. If using a microwave, heat in 20-30 second bursts, stirring in between.
- Pour the melted chocolate over the layered base and use a spatula to spread it out.
- Place in the fridge for 1 hour or freezer for 30 minutes until completely set.
- Once hardened, break into rustic pieces and store in an airtight container in the fridge for up to 5 days.
