Chocolate Pumpkin Banana Bites (Edit recipe)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Peel and slice bananas into 1/4 inch thick rounds.
  2. Line a baking sheet with unbleached parchment paper. Layer banana slices and place about 1/2 tsp pumpkin filling on each slice. Top with another banana slice to make a little sandwich. Do this until all banana slices are used. You should end up with around 30-35 bites.
  3. Place pumpkin banana bites in the freezer until firm, about 1 hour.
  4. After an hour, melt your chocolate by adding chocolate chips and coconut oil to a pan. Remove pan from freezer and using a toothpick of bamboo stick, dip each frozen banana bite into the melted chocolate until fully coated. Once all are fully coated, I like to drizzle a little chocolate on top to cover the small hole on top. Top each banana bit with a little bit of pumpkin pie spice.
  5. Place baking tray back in the freezer to set for 30 minutes. Transfer to a freezer safe storage container. When ready to eat, allow to thaw for a few minutes
