Christmas Light Sugar Cookies
These gorgeous sugar cookies are such a fun to mix it up from your traditional sugar cookies! They're gluten free, refined sugar free, dye free, and with a dairy free option, too! They're soft, sweet, and so much fun!
Ingredients
- .25 cup.25 cup.25 cup Unsalted Butter, Or vegan butter
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, Softened
- 6 Tbsp6 Tbsp6 Tbsp Coconut Sugar, Or granular sugar of choice*
- 1 whole1 whole1 whole Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .25 tsp.25 tsp.25 tsp Almond Extract
- 1 cup1 cup1 cup Almond Flour, +2 tbsp
- .25 cup.25 cup.25 cup Coconut Flour
- .25 tsp.25 tsp.25 tsp Baking Soda
- 1 cup1 cup1 cup Powdered Sugar
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Milk
- 0.25 cup0.25 cup0.25 cup Unreal Chocolate Gems

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whip butter, coconut oil , and sugar together
- Add egg and extracts and whip again
- Add remaining ingredient
- Wrap dough in plastic wrap and refrigerate 30min
- Dust a surface with coconut flour, roll out dough, and use circle cookie cutter to cut out cookies
- Lined on parchment paper lined baking sheet and freeze for a few minutes if your dough has warmed
- Bake at 325 for 12-13 min
- Make icing by combining powdered sugar and milk together until drippy. Add more milk as needed
- Let cool completely, dip in Royal icing, allow icing the harden, then use melted chocolate as the string of lights
- Cut dye free chocolate gems in half* and place on your string
- Enjoy!
