Flower Sugar Cookies (gluten, dairy, dye free)
These adorable sugar cookies are a must add to your spring or Mother's Day gatherings! They're gluten free, dairy free, and naturally colored!
Ingredients
- .25 cup.25 cup.25 cup Cashew Butter, **
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, Soft
- 6 Tbsp6 Tbsp6 Tbsp Lakanto Classic Monkfruit Sweetener (with Erythritol), **
- 1 whole1 whole1 whole Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.75 cup0.75 cup0.75 cup Almond Flour, +2 tbsp
- .25 cup.25 cup.25 cup Coconut Flour
- .25 tsp.25 tsp.25 tsp Baking Soda
- 1 pinch1 pinch1 pinch Sea Salt
- .75 cup.75 cup.75 cup Vanilla Frosting (Simple Mills)

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whip cashew butter, coconut oil, and sugar together until smooth
- Add egg and vanilla and whip again
- Fold in flours and baking soda until well combined
- Wrap dough in plastic wrap and refrigerate half hour
- Dust a surface with coconut flour and roll dough out
- Use flower cookie cutter to cut your dough, place on parchment paper lined baking sheet and bake at 325 for 11-12 minutes
- Move to wire cooling rack around a few minutes of removing pan from stove
- Mix your icing with colorants of choice ( I used colorkitchenfoods brand in yellow, orange, and pink) and ice your cookies as shown in the video
