- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste

- .5 cup.5 cup.5 cup Coconut Milk
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Orange Juice
- 0.25 cup0.25 cup0.25 cup Cilantro, fresh, chopped

- Heat 1 tablespoon olive oil in a large, deep pan and cook the onion for 4-5 minutes until translucent.
- Add the garlic, ginger and continue to cook for another minute.
- Stir in the paprika, ground cumin then add the tomato paste, orange juice, and coconut milk. Stir well until you have a smooth sauce and bring to a simmer.
- Add the mushrooms and zucchini, cover with a lid and cook for 15 minutes or until tender.
- Stir in the diced tofu and fresh cilantro, season to taste and serve over rice, greens or as is!
