cobb salad
this may be a variation from a traditional cobb salad, but who said you can't make it with your own spin? this bad boy is loaded with goodies & a perfect lunch for a spring or summer day!
Ingredients
- Arugula, or leafy green of choice
- Deli Ham, or meat of choice
- Egg, Hard Boiled, diced
- easy baked bacon (click for recipe), chopped
- Frozen Vegetables, I roasted root veggies & broccoli
- Radish, or other raw veggies - tomatoes, avocado, etc.
- Parm Crisps, or cheese
- Applewood Smoked Salt - Texas Salt Co.
- Black Peppercorns, Ground Fresh
- greek yogurt "honey" mustard (click for recipe)

- first make dressing, by combining all the ingredients together - refrigerate until ready to serve.
- to build salad, start by laying a bed of greens.
- then add your proteins - meat + eggs + bacon.
- then add any veggies or fruits you like - I like adding some roasted veggies & some raw veggies.
- add parm crisps or cheese.
- drizzle with the greek yogurt "honey" mustard dressing.
- I like to top mine with redmond's hickory smoked salt & black pepper.
