Cosmic Brownie Banana Bread
Rich, fudgey chocolate banana bread, with a silky chocolate ganache coating. It's pure bliss with each bite! Gluten, dairy, and refined sugar FREE. I even included a protein, boost as the cherry on top 🤭
Ingredients
- 3 whole3 whole3 whole Banana, Ripe
- 3 whole3 whole3 whole Eggs
- .25 cup.25 cup.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .25 cup.25 cup.25 cup Chocolate Protein Powder, Or more cacao
- .25 cup.25 cup.25 cup Raw Cacao Powder
- 2.5 cups2.5 cups2.5 cups Almond Flour, Don't pack
- 1 tsp1 tsp1 tsp Baking Soda
- 1 pinch1 pinch1 pinch Sea Salt
- .5 cup.5 cup.5 cup Baking Chocolate Chips
- .5 cup.5 cup.5 cup Dark Chocolate
- .75 cup.75 cup.75 cup Creamy Peanut Butter

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a 9x5 loaf tin with parchment paper
- Whisk together eggs, banana, maple syrup, and vanilla
- Mix in dry ingredients with a spoon, then fold in chocolate chips
- Pour in loaf tin and bake at 350 for 50-60 min until a toothpick comes out clean
- Remove from oven , and after 10 minutes remove the whole loaf with the sides of parchment paper and place on cooling rack
- Cool for at least an hour
- Make ganache by melting chocolate chips, and mixing throughly with the peanut butter
- Pour over banana bread, then top with dye free gems or chocolate gems
- Ganache will be gooey, but once placed in the fridge for an hour it with thicken and solidify
