If you’re looking for a homemade, high protein, pancake recipe for the weekend, these are it. My kids loved these and had no idea they had cottage cheese in them. They ate every single bite and enjoyed them thoroughly.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your pancake pan on the stove
  2. In a immersion blender or regular blender, add your cottage cheese and egg. Blend together until the cottage cheese creamy. Add to a mixing bowl. Then add your mashed banana, vanilla extract, flour, and baking powder. Mix together.
  3. Poor too many size pancakes onto your pan and cook. I added blueberries to this batch of pancakes. Feel free to add any toppings you would like, for example, chocolate chips, sprinkles, or more banana bananas.
  4. Enjoy!

Notes

Add all of their favorite toppings! We chose blueberries! If you don’t have cottage cheese, Greek yogurt will work too!

  1. These were delicious and so easy! I made minis and mashed the batter down as I was cooking them bc they cook fast and are super fluffy! We will make them again!
