crab rangoon nacho bites (Edit recipe)

if we were going to a chinese restaurant, crab rangoon was the first thing we ordered — and i LIVED for it đŸ„ŸđŸŠ€đŸŒ¶ïž

so i recreated those same nostalgic flavors in a gluten-free, high-protein nacho bite:  real crab meat crab cake balls + cottage cheese “cream cheese” filling +  homemade apricot sweet chili sauce + cucumber slices or crispy masa tortilla chips for that perfect crunch

nostalgic, savory, a little sweet — and made to impress on any appetizer platter.

“cream cheese” mixture:

apricot sweet thai chili sauce

tortilla chip bite

cucumber bite

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

crab cake balls

  1. preheat oven to 400.
  2. first add tortilla chips to a food processor & blitz a few times into a finer crumble.
  3. to a bowl, add chip mixture & remaining crab cake balls ingredients.
  4. using a medium cookie scoop, make mini crab cake balls (~48).
  5. place crab cake balls on a lined baking dish, then bake for 12-15 minutes.

cream cheese mixture

  1. to a food processor or using an immersion blender, blend mixture until smooth & creamy.

apricot thai chili sauce

  1. add all ingredients to a sauce pan & whisk together until combined.
  2. bring mixture to a boil, then simmer for 6-8 minutes or until thick; add additional water as needed.

assembling your bites

  1. ortilla chip bite: to a sheet pan, layer tortilla chip → dollop of cream cheese mixture → crab cake ball → small slice of cheese; broil for 3-4 minutes or until cheese melts → transfer to a platter → drizzle with apricot thai chili sauce + cilantro.
  2. cucumber bite: to a platter, layer cucumber → dollop of cream cheese mixture → crab cake ball → drizzle with apricot thai chili sauce + cilantro.
