we're all looking for ways to make recipes healthier, easier and tastier. Soup season has begun and im a sucker for a creamy soup! You don't need the cream, just follow these easy steps and you will have the creamiest, easiest and coziest soup. This one is for the soul!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. pre-heat oven to 425F
  2. start breaking a part 1 whole head of cauliflower using my method of piercing the stem and tilting to break a part.
  3. this method will make clean up way easier.
  4. on a lined baking sheet, place your florettes and spread out.
  5. season with salt, pepper and oil.
  6. any neutral oil or olive oil works great.
  7. roast cauliflower for about 25-30 until fork tender.
  8. in a pot, add some more oil, onions and shallots, then season with salt and black pepper.
  9. saute for 2-3 mins.
  10. add your minced garlic and sauté with onions and shallots until you can smell the aroma.
  11. about 2-3 mins.
  12. optionally, I like to deglaze with white wine just to release all the flavour (fond) from the bottom.
  13. once reduced about 5 mins, pour in your chicken or veggie stock.
  14. add your cauliflower florettes once they're done roasting and emulsify with a handheld.
  15. if you do not have a handheld, carefully transfer to a blender and blend until smooth.
  16. add your sliced cremini mushrooms and bring soup to a boil.
  17. once it boils, stir and reduce simmer for 20-25 mins.
  18. serve and enjoy!
