Creamy and delicious creamsicle popsicles made with fresh tangerine or oranges, and zucchini! It's refreshing and wonderful, and my kids ask for this all the time.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Peel the tangerines and separate into segments.
  2. Remove the skin off of the zucchini and cut into 1/2 inch slices.
  3. Place both the tangerines and zucchini slices on a baking sheet and freeze in a single layer for 4 hours until frozen solid.
  4. Place the frozen segments and zucchini slices in the food processor, and process until crumbly. Scrape down the sides.
  5. Add coconut milk, maple syrup, and vanilla extract. If you want, you can also zest an orange for a stronger citrus flavor and add it to the mixture.
  6. Process until smooth and creamy, adding more milk if the mixture doesn't break down easily. The mixture should be thick and creamy.
  7. Taste and add more sweetener if you prefer.
  8. Transfer to a popsicle mold, then freeze for at least 4 hours.
  9. Remove and enjoy!

Notes

  • I used this popsicle mold, which is perfect for thicker mixtures and they make smaller popsicles for kids.
  • You can turn this into a sorbet instead of popsicles. After step 4, keep processing until a creamy sorbet mixture is formed. Scoop and enjoy immediately.
