Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bring a large pot of water to a boil and season it generously with salt. Cook pasta until al dente, reserving a cup of pasta water before draining.
- In a small bowl, mix the paprika, garlic powder, and oregano. Rub this seasoning blend all over the chicken breasts.
- In a large sauté pan, melt butter with sundried tomato oil. Add chicken and cook until golden and cooked through, about 10–12 minutes. Remove and set aside.
- In the same pan, sauté shallots, garlic, and Italian seasoning until fragrant, about 1 minute.
- Stir in sundried tomatoes and tomato paste. Slowly add chicken broth, heavy cream, and Parmesan. Stir well and simmer for 3 minutes.
- Cut chicken into cubes or slices, then return to the pan with the sauce. Add cooked pasta, tossing to coat.
- Fold in spinach until wilted. Top with fresh basil and more Parmesan before serving.
Notes
Add pasta water if needed to loosen the sauce.
