Crockpot Irish Beef Stew (Edit recipe)

Hearty and filling, this is the kind of meal in a bowl that warms you up on a cold day. It is healthy comfort food that is also quick to prepare and the crockpot or oven does the time consuming work.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Scrub and rinse potatoes. Chop into 1 inch chunks. Rinse and peel carrots, chop into 1 inch pieces. Peel onion and cut into 6 wedges. Peel and chop garlic cloves finely.
  2. Combine cornstarch with about ¼ cup of the stock and set aside.
  3. Begin by placing half of the potatoes, carrots, onions and garlic at the bottom of the crockpot. Season with salt, pepper, half of the thyme and both bay leaves. Place the roast on top of the veggie mixture. Then place the remaining vegetables, cornstarch mixture and beer on top of the roast. Add chicken or beef stock until it just reaches the top of the roast. Finally season with more salt, pepper and remaining thyme.
  4. Put the lid on the crockpot and set to high heat for 6 hours. When ready to serve, put a portion of meat, veggies and sauce into a bowl. Drizzle with Basil Awesome Sauce and serve with a hearty slice of Irish Soda Bread. Recipe links are above in the "A Little Extra Something" paragraph:-)
