Dark Chocolate Pomegranate Peanut Butter Cups

Ingredients
- 1 lb1 lb1 lb 55% Cacao Organic Vegan Semi-Sweet Dark Chocolate Chips - Pascha Chocolate Co.

- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1.2 cup1.2 cup1.2 cup Creamy Peanut Butter

- 0.25 cup0.25 cup0.25 cup Pecans, chopped

- 0.25 cup0.25 cup0.25 cup Pomegranate, pomegranate arils (Pom Wonderful)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- - place 1/2 of chocolate and coconut oil in a glass dish and melt in microwave for 30 seconds. Repeat again if needed.
- - sprinkle the bottom of each of the muffin molds with pecans.
- - pour 1 tbsp melted chocolate over pecans (making sure to cover the bottom of the molds.
- - place in freezer to set.
- - heat peanutbutter so it becomes runny.
- - pour over set chocolate and sprinkle with pomegranate seeds.
- - place in freezer to set.
- - melt final half of chocolate and cover each of the cups.
- - place in freezer to half harden, and add pomegranate seeds and a mint leaf before fully setting.
- - keep in freezer for 15 minutes before serving.
- -enjoy!
