Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Separate the egg yolks from the egg whites. Mash the egg yolks with the back of a spoon or a fork
  2. Lightly toast all the spices (onion, garlic, ginger, coriander, turmeric, chili and gram masala) on low heat in a sauce pan for a few minutes. Make sure that you don't burn them.
  3. Add the toasted spices to the egg yolks. Add in the mayo, chopped onions, carrots, jalapenos and the tomato paste
  4. Give everything a nice mix
  5. Use a piping bag or a spoon to dollop the mashed mixture on to the egg whites
  6. Garnish with capers, chopped coriander and a light dash of chili powder
  7. Enjoy!

Notes

Taste the mashed mixture to see if you need to add salt, then add accordingly.
