- in a bowl, mix together all ingredients for filling.
- freeze for 5-10 minutes, then roll into little balls; store in the freezer until dough is ready.

- in a food processor, add dry ingredients; blitz into a powder.
- transfer to a bowl, then add softened pistachio butter (microwave for 10-15 seconds), vanilla extract & little water; combine to form a dough.
- put dough in freezer for 30-60 minutes.
- using a food processor, lightly blitz pistachios & salt into a fine crumb, then place in a bowl.
- using a small scoop, get a scoop of cookie dough, then place a little of the filling ball inside; roll into a ball.
- roll each cookie dough ball in crushed pistachios, then place balls on a lined baking sheet.
