And the best part? You won't need to chop any veggies. Just grab a bag of riced cauliflower and kimchi at the supermarket. The glaze is also breeze to make. A quick whisk of ingredients like miso and mirin and you'll have a sticky, spicy-sweet sauce that caramelizes as it bakes. Serve this hearty and vibrant dish with green beans or a light salad.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a bowl, combine ground turkey, kimchi, eggs, salt, cauliflower rice, miso and 2 tablespoons of gochujang until well incorporated.
  2. Add the mixture to a baking dish and gently mold into a round 8-inch loaf.
  3. Whisk together the remaining 2 tablespoons of gochujang paste with mustard, sesame oil, lime juice, soy sauce, and mirin. Taste and adjust to your preference.
  4. Brush the glaze over the top of your meatloaf and sprinkle with sesame seeds.
  5. Bake at 350 F for approximately 45 minutes or until done.
  6. Serve warm and enjoy.

Notes

Make your glaze or meatloaf spicier by adding more gochujang paste.
