Easy Weeknight Split Pea Soup
Warm, cozy, packed with protein and fiber, and easy enough for a weeknight meal!!
Ingredients
- 8 oz8 oz8 oz Bacon, Chopped up (I use scissors)

- 1 lb1 lb1 lb Ground Chicken

- 111 Red Onion, Diced
- 111 Zucchini, Large, shredded
- 1 tsp1 tsp1 tsp Salt

- 1 tsp1 tsp1 tsp Black Peppercorns, Ground Fresh

- 1 tsp1 tsp1 tsp Thyme, Dried

- 1 cup1 cup1 cup Split Peas, Dried
- 4 cups4 cups4 cups Chicken Bone Broth

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook bacon in a medium Dutch oven until brown and crispy
- Remove bacon and set aside. Drain excess bacon grease (I save mine in a mason jar in the fridge)
- Add ground chicken and break up
- Add onion and zucchini
- Once chicken is cooked through, add the remaining ingredients, including the bacon back in
- Stir well, get to a simmer, and cover on low for 1 1/2-2 hrs
- Season with more salt and pepper if need be
- Enjoy!!
