Easy Whole Orange Cake-Dairy Free and Gluten Free
This cake is the easiest cake you will ever make, and it's so delicious. Utilizing a whole orange, this bright and moist gluten-free, dairy-free cake is proof that exceptional baking doesn't have to be complicated. With just a few ingredients, and a blender or food processor, you can easily prepare this cake in 20 minutes or less. Once it bakes and cools, give it a dusting of powdered sugar, and enjoy a warm slice with your favorite cup of tea or coffee while you relax or read a book.
Ingredients
- 111 Navel Orange, washed and cut into bite size pieces
- 118 ml118 ml118 ml Sunflower Oil, 1/2 cup. You can use avocado oil, or light olive oil
- 5 ml5 ml5 ml Pure Vanilla Extract, 1 teaspoon

- 200 grams200 grams200 grams Granulated White Sugar, 1 cup

- 3 whole3 whole3 whole Eggs, 3 US large eggs
- 240 grams240 grams240 grams Gluten-Free All-Purpose Flour - Primal Palate, 2 cups, spoon filled and leveled

- 10 grams10 grams10 grams Baking Powder, 2 teaspoons

- 2 grams2 grams2 grams Himalayan Pink Salt - Primal Palate, fine salt, 1/2 teaspoon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 350 F/177 C. Lightly grease a 9 inch round cake pan with avocado oil, and place a parchment round on the bottom of the cake pan for easy removal.
- Wash your orange under cold running water, and be sure to remove the nub of the stem if it still attached.
- Cut the orange in half, and then cut it into 1 inch pieces, and place it into a high speed blender or food processor.
- Add in the oil, vanilla, sugar, and 3 eggs into the blender. Blend until the ingredients are completely smooth. This will depend on the strength of your blender, but it should only take 20 seconds or less. You want to make sure there aren't any chunks of orange left.
- In a large mixing bowl, whisk together the gluten-free flour, baking powder, and salt.
- Pour the wet mix from the blender into your dry mix, and stir until it's evenly combined.
- Pour the batter into your prepared cake pan, and bake on the middle rack in the center of the oven for 35 minutes.
- Remove from the oven, and allow the cake to cool completely.
- Transfer the cake to a plate or cake stand, and dust the top with powdered sugar, slice, and enjoy.
