  • 16 oz Rotini, Cooked according to package instructions for 2 minutes less than Al dente (to make gluten-free, sub gluten-free rotini)
  • 5 Tbsp White Wine Vinegar, Divided use
  • 8 Tbsp Plant-Based Mayonnaise, Divided use (egg-free mayo used to accommodate egg allergy)
  • 0.5 tsp Sea Salt
  • 4 oz Butter Lettuce, Roughly chopped (4oz container butter lettuce blend with crispy green lettuce leaves
  • 10 oz Tomato, Grape, Quartered or halved depending on size (10oz container grape tomatoes)
  • 12 pieces Bacon, Cooked, crisp bacon strips (12 strips); roughly chopped
  • 1.5 Tbsp French Onion Seasoning Mix - Primal Palate

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Run cold water over just-cooked, pasta in colander in kitchen sink until pasta is cool to the touch. Drain of excess water then add pasta to large bowl.
  2. Add 4 Tbsp white wine vinegar to pasta; stir.
  3. Add 6 Tbsp mayo & sea salt; stir.
  4. Add chopped lettuce; stir.
  5. Add chopped grape tomatoes; stir.
  6. Add chopped bacon; stir. (*If making one day in advance, wait to add the bacon until ready to serve so bacon remains crisp*).
  7. Add remaining 2 Tbsp mayo (do not stir). Sprinkle Primal Palate French Onion Seasoning Mix directly on top of mayo, followed by remaining 1 Tbsp white wine vinegar; stir to combine well with pasta salad ingredients.
  8. Cover bowl; keep in fridge until ready to serve (or can be served immediately). Serves 10-14+ as a side dish.

Notes

Egg-free. Dairy-free. Nut-free. Gluten-free. Sesame-free. Can make the morning of a party or make the night before and keep covered in fridge until ready to serve. If making the night before, I recommend adding bacon, and stirring bacon into pasta salad, right before serving, to keep bacon crisp. Also delicious served as a main dish for a summer dinner. Can add grilled chicken, cedar plank-grilled salmon or grilled, sliced steak on top too. Yum!
