Fried Ice Cream (Paleo)
We always looked forward to this delicious dessert after a meal at Casa Bonita in the Denver area back in the 70’s - It had a Mexican Villa flair to it but was more well known for its indoor cliff diving than the food, which was just so-so! This variation (which is not actually fried) uses crushed plantain strips and coconut to create that scrumptious coating. It’s a very unique treat and your efforts to make it will not be wasted, it’s so delicious! Use your favorite ice cream, make that coating and enjoy soon!
Ingredients
- 1 - 2 cups1 - 2 cups1 - 2 cups Vanilla Ice Cream, use your favorite brand
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Bean Ghee - 4th & Heart, or your favorite brand
- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup
- .5 cup.5 cup.5 cup Plantain Chips, strips, finely crushed, I use Artisan Tropic brand
- .5 cup.5 cup.5 cup Coconut, Shredded, fine shred, unsweetened
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 1 pinch1 pinch1 pinch Real Salt - Redmond
- .5 cup.5 cup.5 cup Dark Chocolate Chips
- 2 tsp2 tsp2 tsp Coconut Oil
- 1 Tbsp1 Tbsp1 Tbsp Vanilla Bean Ghee - 4th & Heart
- 1 Tbsp1 Tbsp1 Tbsp Almond Milk
- .125 tsp.125 tsp.125 tsp Cinnamon, Ground

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt ghee in a skillet - add remaining coating ingredients and stir to combine over low heat.
- Cook until browned, stirring occasionally. Remove to a plate so you can roll the ice cream balls around in and allow to cool.
- Remove ice cream from the freezer and allow it to soften up a bit, scoop into 2” balls, then roll the scoop around in the coating. Use your hands to press into the ice cream to adhere coating to the ice cream. Repeat until all coating is used, then return to the freezer until ready to serve.
- When ready to enjoy, remove coated ice cream from the freezer to a plate or bowl. Allow them to thaw a bit and prepare the drizzle.
- Add all drizzle ingredients to a double broiler, stir occasionally until melted. Drizzle over the top of ice cream.
- Serve and enjoy!
