- Wash your sweet potatoes well and peel the skin.
- You may encounter some dark spots or blemishes, just simply remove.
- Once peeled, cut into bite size pieces.
- This will speed the cooking time.
- Add your sweet potatoes to a pot and submerge with water until just covering.
- Boil for 7-10 mins or until fork tender.
- Once potatoes are cooked, drain in colander.
- During this step, potatoes will steam dry.
- In the same pot, add in your butter and let it melt.
- Add in 4-6 cloves of garlic and cook low and slow for 3-5 mins.
- Then add in 2 sprigs of rosemary and infuse it in your butter sauce for 2-3 mins.
- Remove rosemary, or choose to keep it in and remove from stem.
- Add in your potatoes and puree.
- Once pureed, continue cooking on stove top until desired temperature.
- Add to dish of choice and top with melted butter or olive oil.
- It’s optional to garnish with micro greens, but I love the aesthetic.
