Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Wash your sweet potatoes well and peel the skin.
  2. You may encounter some dark spots or blemishes, just simply remove.
  3. Once peeled, cut into bite size pieces.
  4. This will speed the cooking time.
  5. Add your sweet potatoes to a pot and submerge with water until just covering.
  6. Boil for 7-10 mins or until fork tender.
  7. Once potatoes are cooked, drain in colander.
  8. During this step, potatoes will steam dry.
  9. In the same pot, add in your butter and let it melt.
  10. Add in 4-6 cloves of garlic and cook low and slow for 3-5 mins.
  11. Then add in 2 sprigs of rosemary and infuse it in your butter sauce for 2-3 mins.
  12. Remove rosemary, or choose to keep it in and remove from stem.
  13. Add in your potatoes and puree.
  14. Once pureed, continue cooking on stove top until desired temperature.
  15. Add to dish of choice and top with melted butter or olive oil.
  16. It’s optional to garnish with micro greens, but I love the aesthetic.
  17. Serve and enjoy!
