Process

  1. Using a large pot, heat the ghee over medium heat.
  2. Add the onion and saute for 3-4 minutes. Add the carrots and celery, and lightly season with salt and pepper. Saute for 4-5 more minutes or until lightly tender.
  3. Add the broth and seasonings. Bring to a boil and reduce to a simmer for 15 minutes.
  4. Add the cooked chicken, lemon juice, and frozen peas. Simmer for another 4-5 minutes to heat the chicken.
  5. Serve the soup over pasta with extra salt and pepper to taste!
