Gluten Free Chocolate-Filled Cinnamon Sugar Bites
These chocolate-filled, cinnamon-sugar bites are dangerously delicious! Inspired by a favorite treat I make with Trader Joe’s gluten-free pizza dough, each bite is filled with gooey chocolate, dusted in cinnamon sugar, and topped with extra chocolate drizzle. Best enjoyed warm and melty—good luck stopping at just one! Ingredients
For the Dough
- 2 cups2 cups2 cups Gluten-free All-Purpose Flour - Primal Palate
- 1 tsp1 tsp1 tsp Salt
- 2 tsp2 tsp2 tsp Ground Cinnamon
- 0.75 tsp0.75 tsp0.75 tsp Active Dry Yeast
- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil
- 1 cup1 cup1 cup Water, slightly less than 1 cup, warmed between 110° to 115°F
For the Coating & Filling
- 1 cup1 cup1 cup Pascha Vegan No Milk Chocolate Baking Chips
- 0.5 cup0.5 cup0.5 cup Cinnamon Sugar Cookie Blend - Primal Palate
- 1 tsp1 tsp1 tsp Avocado Oil Spray

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
For the Dough
- **If you prefer to use a premade gluten free refrigerated pizza dough (I have only tested this with the one from Trader Joe's!), start with step #5 to divide the dough evenly.
- In a large mixing bowl, combine the flour, salt, and cinnamon.
- In a separate small mixing bowl, stir together the warm water, yeast, and olive oil until well mixed.
- Pour the water mixture into the flour mixture and knead until thoroughly combined. If the dough feels too dry, wet your hands slightly as needed while incorporating; this gradual addition of water prevents excess water all at once, maintaining the dough's consistency. Aim for a slightly wet, pizza-dough-like texture.
- Divide the dough into 12 evenly-sized pieces. You can either weigh each dough ball or use a knife to cut them evenly. Roll out each dough piece into circles, making them just thin enough so the dough doesn’t rip.
For the Coating & Filling:
- Place a little less than 1 tablespoon of chocolate chips in the center, then seal the dough around the chocolate to form a ball. Roll it between your hands to ensure it's uniform.
- Spray the outside of each ball with avocado oil spray.
- In a small bowl, add the cinnamon sugar. Roll each ball in the cinnamon sugar until completely coated.
- Transfer the coated bites to a preheated 350°F air fryer and air fry for about 7-8 minutes, shaking halfway through. Cooking time may vary depending on the air fryer and ball size.
- Remove from the air fryer.
- In a separate bowl, melt some chocolate chips in the microwave. Drizzle the melted chocolate over the bites and enjoy while warm!
Notes
You can use any chocolate you like in this recipe—whether it's dark, milk, or semi-sweet. If you're not into making your dough from scratch, grab a refrigerated gluten free dough (I recommend the one from Trader Joe's for this) for a quick and easy swap. These bites taste best when they're nice and warm straight from the air fryer. Instead of a chocolate drizzle, you could also dunk them right in the melted chocolate. If you're craving more cinnamon sugar goodness, after air frying, try brushing or dunking the bites in butter for an added layer before sprinkling on a little extra cinnamon sugar.
