Gluten-Free Date Orange Banana Bread
Love this banana bread for its subtle change of flavor, with chopped dates and orange zest. It's gluten-free and perfect for when you have bananas that extra ripe.
Ingredients
- 444 Medjool Dates, (make sure there are no pit fragments)
- 2 cups2 cups2 cups Gluten-Free Flour
- 2.5 tsp2.5 tsp2.5 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Salt
- .5 cup.5 cup.5 cup Granulated White Sugar
- 111 Egg, large, lightly beaten
- 1 cup1 cup1 cup Banana, Mashed (about 2 medium, plus one whole to put on top of the batter), Mashed
- .5 cup.5 cup.5 cup Milk, regular or non-dairy
- 1 tsp1 tsp1 tsp Vanilla Extract
- .333 cup.333 cup.333 cup Canola Oil, Vegetable or
- 3 Tbsp3 Tbsp3 Tbsp Orange Juice
- 111 Orange, Zest of one
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Turbinado Sugar, Raw or ((optional) )
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350. Grease 8 1/2 x 4 1/2 loaf pan or line with parchment paper.
- Place the 4 dates in a cup of hot water to soften about 5 min.
- Place the sugar in a small bowl and zest the orange into it. Rub the orange zest into the sugar with your fingers.
- In a large bowl, combine the flour, baking powder and salt. Add in the sugar with the orange zest and mix well.
- Drain and chop the dates into small pieces then add to the flour mixture stirring to ensure they are coated in the flour.
- In a separate bowl combine egg, mashed banana, vanilla, milk, oil, and orange juice. Mix well.
- Add the wet ingredients to the dry ingredients, stirring until moistened.
- Add batter to the greased or lined loaf pan.
- Cut a whole banana in half lengthwise and place the cut side facing up onto the batter.
- Sprinkle the top of the batter with raw or turbinado sugar. (Optional)
- Bake at 350F for approx 1 hour or until tester comes out clean.
- Cool in pan 10 min, then remove to cooling rack to finish cooling.
- Cool completely before cutting into it.
Notes
This recipe can be made using regular flour and regular milk.
