Gluten Free Lasagna Soup and Garlic Bread

Ingredients
Garlic Bread
- 1 whole1 whole1 whole Gluten and Grain Free Baguette - Against the Grain
- 2 Tbsp2 Tbsp2 Tbsp Vegan Buttery Spread
- 1 clove1 clove1 clove Garlic, cut so that inside of garlic is exposed
- 1 tsp1 tsp1 tsp Dried Chives
Lasagna Soup
- 1 lb1 lb1 lb Ground Beef
- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste
- 32 oz32 oz32 oz Crushed Tomatoes
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning
- 8 oz8 oz8 oz Chicken Broth
- 16 oz16 oz16 oz Water
- 16 oz16 oz16 oz Gluten-Free Fusilli Pasta
- 8 oz8 oz8 oz Organic (lactose free, Good Culture) Cottage Cheese, or other dairy free brand
- 8 oz8 oz8 oz Daiya Dairy Free Mozzarella Style Shreds
- 1 Tbsp1 Tbsp1 Tbsp Garlic, minced
- 8 oz8 oz8 oz Baby Spinach
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- First, prep your soup.
- In a large stock pot, brown your ground beef and garlic.
- Add in the tomato paste, crushed tomatoes, and italian seasoning and stir all together.
- Add in chicken broth, water, and noodles.
- Bring to a boil, and then simmer until noodles are almost fully cooked.
- Add in spinach and cheeses, and cook a few more minutes until everything is wilted and melty together.
- Let soup cool down while you make the garlic bread.
- Cook your Against the Grain baguette according to instructions.
- Then, slice in half, rub with garlic clove, spread on butter, and top with dried chives.
- Enjoy the bread dipped in soup!
