He introduced me to a delicious dish: ravioli lasagna, a genius twist on classic lasagna. This recipe is a treat. It's a hearty, cheesy, and satisfying comfort food. It's adaptable and easily made gluten free using gluten free frozen ravioli - and if you prefer to keep the meat out, that's fine, too!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 400°F.
  2. If you're using ground meat, cook it in a pan over medium heat with 2 tablespoons of olive oil until it's nicely browned and no longer pink. Add in the frozen chopped spinach and mix everything together. If you're going for a meat-free version, you can skip this step and simply heat up the spinach. You can also incorporate any other veggies you like.
  3. Grease a square baking dish to prevent sticking.
  4. Create layers in the baking dish. Start with a layer of tomato sauce, then arrange the frozen raviolis (do not cook them first) in a single layer on top. Add half of the cooked meat or veggies, followed by another layer of sauce. Then, generously cover it with a layer of shredded mozzarella cheese.
  5. Repeat these layers until all the raviolis are used up, finishing with a final layer of cheese. The quantity of each ingredient may vary depending on the size of your dish.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil and continue baking for an additional 15-20 minutes, or until the top turns slightly brown and all the cheese is beautifully melted. Sprinkle some fresh parsley on top.
  8. Serve it hot, perhaps with some homemade garlic bread, and savor every bite!

Notes

For the best Ravioli Lasagna, remember to layer in the frozen ravioli directly without prior cooking. Distribute the layers evenly to ensure uniform cooking. Use high-quality ingredients like your favorite red sauce and mozzarella cheese for the best flavor. Customize with your preferred meat, veggies, or seasonings, and allow the lasagna to rest for a few minutes after baking to enhance the flavors.
