Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat 1-2 tbsp of oil in a large skillet over medium heat. Add the peppers and onion, season with a pinch of salt, and cook until softened and translucent. Remove from the pan and set aside.
- Add the ground beef to the skillet and cook, breaking it up as it browns, until fully cooked through. Stir the peppers and onion back in, then add the garlic, salt and pepper.
- Add the tomato paste and cook for 1-2 minutes, stirring so it coats the beef.
- Stir in the worcestershire sauce, vinegar, ketchup, BBQ sauce and mustard. Give everything a good stir and let it cook for another 2-3 minutes.
- Pour in the chicken broth, stir well, then reduce the heat and let the mixture simmer for about 10 minutes, or until thickened to your liking. If it's too thick, mix in a little bit more chicken broth. Taste and adjust the salt and pepper as needed.
- While the sloppy joe mixture simmers, prepare the buns. If desired, melt the butter and mix it with a little salt and garlic powder. Brush over the top sides of the buns (you could even do the inside too!) and bake at 400°F until golden and toasty, or throw them right on the grill for a few minutes.
- Pile the sloppy joe mixture onto the toasted buns, grab plenty of napkins and enjoy!
