Gluten Free, Vegan, Protein Waffles
I was cleaning out my pantry and came across my waffle iron that had not been used in years... Decided it was time to try a new recipe and this delicious, gluten free, dairy free, egg free waffle was created! These waffles freeze great making it a great meal prep recipe if you double it (makes 8 in a double batch). The banana along with the vanilla protein make these sweet enough to eat without maple syrup (but are even sweeter with it)
Ingredients
- 2 cups2 cups2 cups Gluten-Free Rolled Oats, ground
- 1 tsp1 tsp1 tsp Baking Powder

- 222 Banana
- 111 Vanilla Protein Powder, scoop
- 1.5 cups1.5 cups1.5 cups Oat Milk, Organic

- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil, to coat waffle iron

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend oats on high power for 30 seconds until a fine flour forms. (Stir briefly to loosen (and make sure they are not packed in the bottom of blender)
- Add milk, protein powder and baking powder and blend for 30 seconds on hight until mixture is smooth.
- Add banana chopped into small pieces (less work for your blender) and blend on high until smooth and lump-free.
- Switch on your waffle iron and allow to reach cooking temperature.
- Using a pastry brush, coat the waffle iron with coconut oil to avoid sticking.
- Spoon 1/2 -3/4 cup batter evenly into the centre of waffle iron, being careful not to overfill.
- Close lid and cook for 7 minutes (or until steam coming out reduces.)
- Open iron SLOWLY, and leave wafer in place for 30 seconds (this will help avoid sticking) before gently removing with a flat knife. (To avoid sticking, make your waffles slightly smaller than the size of the waffle.)
- Repeat process for remaining batter - greasing iron between each waffle with oil - store waffles on a plate in a warm oven until ready to eat.
- Sever with maple syrup or whatever your heart’s desire.
