Granola Fudge (Paleo/Guten Free)
Combining two of my favorite flavors, not to mention the texture is so terrific! Deep, dark chocolate with crunchy Nana Joes Granola is the combo I can't believe I've waited this long to try. One piece will serve you well (it's so rich) and the good news is, this fudge freezes so well. So plan on sampling a piece (or maybe two) when you make it then pop the rest in the freezer (in that special spot just for you) and grab a piece of a quick afternoon treat!
Ingredients
- 1 cup1 cup1 cup Organic Maple Sugar - Primal Palate, cab sub granulated sugar
- 5 Tbsp5 Tbsp5 Tbsp Ghee, can sub butter
- .33 cup.33 cup.33 cup Barista Almond & Oat Milk - Three Trees, can sub milk of choice
- 1.5 cups1.5 cups1.5 cups Dark Chocolate Gems - Hu, can sub milk chocolate or chocolate of choice
- .5 cup.5 cup.5 cup Chef's Blend Paleo Texas Twisted Praline: Pecan, Caramelized Coconut Milk & Pumpkin Seeds - Nana Joes, or granola of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Coat an 8½ x 5 ½ pan with avocado oil then line with parchment paper.
- In a 3 qt saucepan, add maple sugar, ghee and milk. Melt and let boil over medium low heat for 1 minute...no longer! Do not stir, just let it boil, but keep an eye on it, you don’t want it to boil over.
- Remove from heat, add in chocolate gems and whisk till melted and combined.
- Stir in granola, then pour into the prepared pan. Add additional granola on top or even sprinkles, then place in the fridge until set. Once completely chilled, cut into desired size and enjoy.
Notes
If you want a fun "bottom" you can whirl up about an additional half cup of granola and sprinkle that on the bottom of the pan before pouring in the warm fudge. I'm a texture kinda gal, this was a fun addition for me. Totally optional of course, but have fun experimenting.
