Grinch Muffins
These are so delicious, can’t taste spinach AT ALL, and are a great snack prep for the week.

Ingredients
- 1.5 cup1.5 cup1.5 cup Oat Flour
- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder (Nuzest), see notes
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Baking Powder
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 1 whole1 whole1 whole Banana
- 0.666 cup0.666 cup0.666 cup Milk
- 3 cup3 cup3 cup Spinach, about 2-3 handfuls
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 0.25 cup0.25 cup0.25 cup Pascha Organic Vegan White Baking Chips
- 10 whole10 whole10 whole Organic Raspberries

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend spinach and all wet ingredients together until smooth.
- Mix dry ingredients together in a bowl (except chocolate chips) and add the wet ingredients to the bowl. Once mixed, fold in the chocolate chips.
- Pour 3/4 of the way full into a greased or lined muffin tin. The batter will be thick.
- Bake at 350 for 15-20 min and let cool at least 10 min before removing.
Notes
If not using protein powder, you can add 1/2 cup more of oat flour (so you'd have 2 cups total) but may need to add a little sugar since the protein powder adds sweetness.
