Healthy Apple Crumble Bars

Ingredients
Crust & Crumble
- 2 cups2 cups2 cups Almond Flour
- 2 cups2 cups2 cups Rolled Oats
- 1 cup1 cup1 cup Organic Walnuts, chopped
- 0.5 cup0.5 cup0.5 cup Coconut Oil, melted
- 0.5 cup0.5 cup0.5 cup Pure Maple Syrup
- 0.5 tsp0.5 tsp0.5 tsp Pumpkin Pie Spice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.5 tsp0.5 tsp0.5 tsp Salt
Apple Filling
- 3 cups3 cups3 cups Honeycrisp Apples, diced
- 0.25 cup0.25 cup0.25 cup Water
- 1 tsp1 tsp1 tsp Pumpkin Pie Spice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 Tbsp1 Tbsp1 Tbsp Cornstarch
Icing (Optional)
- 1 cup1 cup1 cup Powdered Sugar, I used the Lakanto monkfruit version
- 1 - 3 Tbsp1 - 3 Tbsp1 - 3 Tbsp Milk, of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees. Line an 8x8 (or similar) baking sheet with parchment paper, and set aside.
- To a large bowl, add almond flour, oats, walnuts, coconut oil, maple syrup, vanilla extract, and salt. Mix to combine.
- Take 2/3 of the crust/crumble mixture and press into the bottom of your lined baking pan. Use your fingers to create an even layer.
- Bake for 15 minutes. While crust is baking, make the filling.
- Add all of the filling ingredients to a saucepan. Cook over medium-high heat for about 15-20 minutes, until apples have softened and mixture has thickened. Stir frequently to avoid burning.
- Pour apple mixture over crust, and spread into an even layer.
- Sprinkle the remaining crust/crumble mixture on top.
- Bake for about 35 minutes, until the top is golden brown.
- Allow to cool completely before slicing into 9 squares (you can always place them in the fridge or freezer to chill for about an hour or so as well). If they aren't cooled completely, they will fall apart.
- Make glaze, if using, by combining powdered sugar and 1 tablespoon of milk at a time. Whisk to combine. If the icing is too dry, gradually add more milk until it reaches your desired consistency. If it's too loose, sift in more powdered sugar, and mix to combine.
- Drizzle glaze over bars.
- Serve with ice cream or whipped cream, and store extras in the fridge. Enjoy!
