Easter season just isn’t complete without the chocolatey peanut butter treats we all know and love. This version has a little protein boost as well as a white chocolate & ube twist that will be sure to wow anyone who tries a bite!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a microwave safe bowl, add a heaping 1/4 cup of white chocolate chips + 1/2 tsp coconut oil. Microwave in 30 second intervals until smooth, stirring in between each interval. Once smooth & melted, stir in 1/4 tsp sweet potato powder. Adjust amount to desired color. Add a thin layer to silicone egg mold + transfer to freezer.
  2. In a medium bowl, add creamy peanut butter + protein powder. Mix with a spoon to loosely combine, then switch to mixing with hands to fully incorporate. Dough should be thick & moldable. If the dough is too dry, add 1-2 tbsp additional peanut butter. Divide into 6 equal size balls & set aside.
  3. Remove egg mold from freezer. Add one filling ball to each egg & press in gently to shape. Place in fridge while working on next step.
  4. In a microwave safe bowl, add a heaping 1/4 cup of white chocolate chips + 1/2 tsp coconut oil. Microwave in 30 second intervals until smooth, stirring in between each interval. Once smooth & melted, stir in 1/4 tsp sweet potato powder. Remove egg molds from fridge & put a generous layer of chocolate over each.
  5. Freeze for 10 minutes & enjoy!

Notes

As an optional add on, melt a little extra white chocolate + coconut oil & mix with a larger amount of sweet potato powder to create a deeper hue. Use as a drizzle over finished eggs & top with a bit of flakey sea salt.
